Cheesy Veg Disc
Ingredients: 1 Packet bread (here I used brown bread, u can use white bread as well) 1 tablespoon butter for greasing For Filling: - 1/4 cup tomatoes finely chopped - 1/4 cup onions finely chopped - 1/4 cup capsicum finely chopped - 2 tbsp mayonnaise - 1/2 cup cottage cheese - Jalapeno (optional) - Black olive (optional)
For seasoning: - 1/4 cup grated cheese - Mix herbs - Chilli flakes (as per taste) - Salt to taste
Method: Combine all the ingredients of filling ( tomato, onion, capsicum and cottage cheese ) in one large bowl. In that add chilli flakes, mix herbs, Mayonnaise and salt.
Take a bread slice and cut them with a round shape cookie cutter. Cut the smaller rings out of the bread slice. Then use each bread slice as a base with a ring on top. Finally spread the melted butter on the bread slice and stick to the slice properly. Add the filling till the level of bread in the centre of the bread ring. Grate some cheese on top and garnish with Jalapeno and Olives. Now place the rings in a baking tray and bake it in a preheated oven at 170 degrees Celcius for 12-15 min till it turns golden and crisp. Serve hot with tomato sauce.
