Khajur Dry Fruit Roll

  • 1 1/2 dates/khajur

  • 1/4 cup almonds

  • 1/4 cup cashews

  • 1/4 cup pistachios

  • 1/4 cup walnuts

  • 1/4 cup cranberries (optional)

  • 2 tbsp clarified butter/ghee

  • 2 tbsp poppy seeds

  • 1 tsp nutmeg powder

  • Aluminium foil for wrapping


Remove the seeds from the dates and chop them in small pieces. Roughly chop all the other dry fruits like cashews, pistachios, almond, and walnuts.

In a heavy bottom pan dry roast the poppy seeds for 2-3 minutes until they turn golden brown. In the same pan then add 1 tbsp ghee and all the dry fruits and roast them for 4-5 minutes, till they release an aromatic smell. Once done, remove them in a plate.

In the same pan add rest of the ghee and chopped dates. Cook for 3-4 minutes on medium flame. Once dates turn to soften, low the flame and add all the roasted nuts, poppy seeds, nutmeg powder and cranberries. Mix everything well together.

Let it cool down for 2 minutes. Now divide the mixture into two parts and gently roll each of them. Take an aluminium foil and cover the khajur rolls in it, wrapping them tightly from the sides (Just like Sausage).

Keep the logs in the refrigerator for 30 minutes to firm. Remove the rolls from the foil and cut it into pieces. You can store these rolls in an airtight container for up to 2 months.
