Mango Marble Cake

Servings: 6 Preparation time: 15min Cooking time 40 min Total time: 55 min Ingredients: - 2 cups all-purpose flour (here I use 50:50 ratio 1 cup all-purpose flor 1 cup wh) - 1 1/4 cup castor sugar - 3/4 cup mango puree (homemade) - 3/4 cup cooking oil (odourless) - 3 nos eggs - 1 1/2 tsp baking powder - 1/4 tsp baking soda - 1 tsp vanilla essence - 1/4 cup milk (if the batter is too thick increase the milk quantity) - 3 tbsp unsweetened cocoa powder diluted in warm water - A pinch of salt

Method: Preheat oven at 180 degrees Celcius. Grease a loaf tin with oil and sprinkle with some flour. In a big bowl add oil and eggs and whisk it with the help of electric beater on medium to high speed until it gets creamy now, add vanilla essence, a pinch of salt and caster sugar and whisk it again. Now add all the dry ingredients like all-purpose flour, baking powder and baking soda combine this well with beater. Then add mango puree and milk then mix with cut and fold method. After dividing the batter into two, keep about 1/3 rd for the cocoa and 2/3 for the mango flavour. Add cocoa mixture to the 1/3 batter. First, pour mango batter in the tin and top of it pour the cocoa batter and make swirls with a toothpick for marble effect. Bake it for 40 to 50 min (keep checking, Mine was ready in 40 mins) Remove the cake from oven and let it cool to room temperature and serve
