Oats Banana Muffins

Ingredients:

- 3 cup rolled oats

- 2 ripe bananas

- 2 eggs

- 1 cup milk

- 1 cup low-fat yoghurt

- 5 tbs honey

- 1 1/2 baking powder

- 1 teaspoon baking soda

- 1 tsp vanilla extract

- 1 tsp cinnamon powder

- Pinch of salt

- Black raisins (optional)

- Some chopped apple (optional)


Method:

Preheat oven for 180 degree celsius. Lightly grease the muffin tin.


In a medium bowl, mash bananas. Mix eggs, honey, salt, baking powder, baking soda, vanilla extract, cinnamon and milk with a hand blender.


Add oats and mix well. Keep this mixture aside for 5-10 minutes, so the oats soak up the liquid, and the consistency is like oatmeal.


After 10 minutes pour this mixture into each muffin cup about 3/4 full. On top of it add raisins and chopped apple pieces. Bake for 30 minutes.


Let it cool on a wired rack. Enjoy with your tea or coffee.
