Red Velvet Cookies
Servings: 10-12 Cookies Prep Time: 20 mins Cook Time: 12 mins Total Time: 32 mins Ingredients: - 1 cup all-purpose flour - 1 tsp cocoa powder(optional) - 1/4 teaspoon baking soda - 1/2 cup unsalted butter (room temperature) - 1/4 cup castor sugar - 1/4 cup light brown sugar - 1 tbsp cornstarch - 1 tsp vanilla essence - 1 tbsp red food colour - 2 tbsp milk - 1 tbsp choco chip (optional) - Pinch of salt
Method: Preheat the oven to 180 degrees Celcius for 10 minutes. Line the baking tray with butter paper and set aside In a bowl, mix butter and sugar (castor and brown) with electric mixer on medium speed until it becomes light in colour and fluffy. Add vanilla essence and red colour in it and mix again. Whisk the flour, cocoa powder, baking soda, cornstarch and salt together in a large bowl. Add half of the flour mixture in butter mixture and mix until the dough comes together. Then add milk slowly and keep mixing until incorporated. Finally, add the rest of the flour mixture and mix. Do not over mix. Add choco chips in it. Roll the cookie dough into 1 tbsp balls. Place the dough balls about 1 inch apart on the prepared cookie sheet. Bake for 10-12 minutes, Allow cooling on baking sheet for 5 minutes. Tip: If cookie dough is too dry, you can increase the quantity of milk. If you want a bright colour, you can skip the cocoa powder.
