Spice Scrambled Egg

Ingredients:

- 4 large eggs whisked lightly

- 1 medium onion finely chopped

- 2 medium tomato finely chopped

- 2 green chilled finely chopped

- 1/4 cup coriander leaves

- 1 tsp grated ginger

- 2 tbsp oil

- 1 tsp red chilli powder

- Salt per taste


Method:

Heat oil in a frying pan on medium heat. Add the onions and ginger and saute for few minutes constantly. Add tomatoes mix well for 1 minute.


Add green chillies and red chilli powder and ensure not to burn the spices.


Turn the heat low. Add whisked eggs, and salt. Let it cook for a while.

Start scraping the eggs from the sides and mix everything together for a scramble.


Keep stirring the eggs scramble. Lastly, turn off the heat.


Garnish with chopped coriander and serve hot with Bread, bun or paratha.
