Vegan Mango Cake

- 2 cup all-purpose flour

- 3/4 cup caster sugar

- 1.5 tsp baking powder

- 1/2 tsp baking soda

- 1 cup mango puree

- 1/3 cup cooking oil

- 1 tsp vanilla extract

- 1/4 cup almond milk

- Pinch of salt


Preheat the oven at 180 degrees celsius for 10 minutes. Grease the tin with oil and all-purpose flour.

In a big bowl add flour, sugar, baking powder, baking soda and salt. Combine it well till no lumps remain.

Now in a separate bowl mix mango puree, oil, almond milk and vanilla extract. After well combined pour this mango batter into the dry ingredient. Mix this with fold and cut method. Don't over mix this batter.

Pour the batter into the prepared tin and spread it evenly.

Bake for 40 minutes until a toothpick inserted comes out clean.

Let it cool for some time and then dust it with powdered sugar and fresh mango pieces.

Enjoy this seasonal dessert.
