Whole Wheat Multi Seed Bread

Total time: Approximately 2-hours 30 min
2 1/2 cup wheat flour
2 tsp milk powder
2 tsp instant yeast (here I have used Prime)
2 tbsp sugar
1 tsp salt
3 tbsp cooking oil
1 cup + 3 tbsp water lukewarm water (add more if needed)
1 tbsp multiseed (sesame, flax or any other)
butter for applying after baking

In a bowl, add yeast, milk powder, sugar and warm water and mix it. Then set it aside for 10 mins to activate the yeast.
After 10 minutes when yeast is activated, add flour and salt. Initially mix with a spatula then start kneading with hand.
When the dough is formed, take out the dough on a clean surface. Put some oil on the surface and start kneading. Add oil little by little and keep kneading for about 15-20 minutes.
Keep this dough in a clean oil greased bowl. Brush some oil on top of the dough and cover with cling wrap.
Rest this dough for 1 hour in a warm place of your kitchen. After 1-hour the dough becomes double in size. Deflate it and again knead it for 5 minutes.
Now take out this dough on a clean surface and give the desired shape and seal the edges properly. Grease the loaf pan with oil and put the dough in a loaf pan. Spread multi seeds on it. Cover this loaf pan and let it rest for 30 minutes.
Preheat your oven at 180-degree celsius for 10 mins.
After 30 minutes grease some milk on top of the bread and bake it for 40-50 minutes.
After 30 minutes take out the cover and bake it for another 5-10 mins till the top of the bread becomes golden brown.
Take the bread out of the oven and apply some butter on top of it. Demould the bread and cover this bread with a damp cloth so it will remain soft.
If the yeast is not activated, do not use it.
In this bread, kneading is a very important process.
Every Overn behaves little differently, and hence temperature settings may vary a little bit.
